Using just the right potatoes
Peeled and chopped into ideal sizes
My father heats the oil
Today it's canned steak and fries and garden peas
A favorite
I anticipate his many years
Perfecting the art of cooking chips
Cooked twice over:
Once for soft interiors
Drained, then after heating up the oil
Cooked once more
To crispen up the outsides
My father
No longer with us
Can no longer satisfy
My longing for this comfort food
Perhaps to honor him
I can teach myself to also become a master
Of the deep fat fryer
